Here is a great dessert idea FROM PAMELA'S KITCHEN that is QUICK, EASY, HEALTHY and yummy

 

This recipe is dedicated to my mother,  I love you Mom! 

 

 Mom's Baked Apples

 

ingredients:

Gala apples one for each person

honey

cinnamom

 

Core the gala apples to remove the seeds, but be careful that you do not go all the way through the bottom.  You want to have a sort of well to fill up with the honey and cinnamon. Save the top to replace on the top.

Pre-heat the oven to 350.  Place the apples on a cookie sheet and fill each well of the apples with about a tablespoon of honey and then sprinkle the top of the apple,until no more "yellow flesh "of the apple is showing, with cinnamon.  Viola'!

Bake the apples for 30 minutes at the 350 degrees.  Check often since some ovens cook faster.  The flesh of the apple should be soft and the skin of the apple should  be brownish red. 

That's it!  Tastes like apple pie...YUMMMMEEE!!! CALORIE count is about 100, depending on how much honey you put in the well....

 

For your information,  apples contain malic acid.  MALIC ACID makes it possible for the body to convert sugars and fats into energy.  So EAT LOTS OF APPLES! THEY ARE  GOOD FOR YOU!

 

People are always asking me for recipes that are low calorie, but are still tasty and easy to prepare.   Hey, I am all about low calories and easy to prepare, because who has time these days.  Here are some recipes that you and your family are just gonna love!

 

  Even though this is usually served cold in the summer, it is still as refreshing, filling and nutritious when the weather gets colder.  Serve this either in a hollowed out bell pepper or get creative with any other eatable veggie.

 

DADDY'S GAZ-PANCHO!

Dedicated to the one I love... My Pancho

Ingredients:

5 medium Vine-ripen Tomatoes or as fresh as you can get them

Fresh Basil half a handful chopped

Celery 2 stalks

Whole green- topped onion 3 chopped

1 whole Jape leno fresh and chopped without seeds (less if you don’t like light heat)

Hand full of fresh cilantro chopped

3 tablespoons of rice vinegar

3 tablespoons of virgin olive oil

2 tablespoons of garlic powder

¼ cup of water or more to desired consistency

Salt and pepper to taste

 

Blend all these ingredients in the Blender or food processor and “Pulse it Baby” for a chunky consistency 3 or 4 pulses.

Side this with fresh sourdough bread, sliced in wedges. Topped with a spray of “I can’t believe it’s not Butter” a little sprinkle of graded Italian cheeses, garlic powder and a sprig of cilantro and basil, then toast it. Put only 4 small wedges per serving.

If you are the first part of the “Stick to the Basics” eating plan wait until after the two-week period to add the bread.  Use Portobello mushrooms as your “ bread”.

Makes 4-6 servings.  100 calories per serving, 100 % vitamin A and C, good source of calcium in the cheese and iron / niacin plus a good fat, Olive Oil. This is very filling can be a meal.   YUM!  LOW CALORIE

 

Lottie’s Sauce

This is dedicated to one of my favorite clients, who would not let me use her name, but created this recipe when she needed something to “sauce up” her roll-overs

Ingredients:

1 whole avocado, peeled, pitted and chopped

2 roasted bell peppers from the jar

A little squeeze of fresh lemon to taste

Your favorite seasoned salt to taste (no sugar added type)

 

Blend all these ingredients in the blender or food processor until creamy and Viola!

50 calories per tablespoon, good source of vitamin A, C and E plus a good-for-you fat, thanks to the avocado.  Use this instead of mayo, which is a bad-for-you fat.

Take a Boston lettuce leaf, spread a little of Lottie’s sauce on it, then top with a thin slice of Boar’s Head low sodium, no msg. ham and turkey, another little bit of Lottie, finish with a layer of a thin slice of Boar’s Head low sodium no msg. Swiss cheese with your favorite diced veggies such as bell pepper, onions, cucumbers  and a few organic soy nuts for added crunch and protein.  Roll it all up and enjoy!  How easy is that, Lottie-Da!

The  HEB deli has the Boar’s Head deli meat and Boerne’s health food store,  Thyme for Health,  has the organic soy nuts and other good-for-your body stuff.
