INGREDIENTS- fresh tomato (two or three for each person), fresh garlic, fresh basil, virgin olive oil
or olive oil Pam spray, fresh onion, and then what ever fresh veggies you want to add. This is just the basic recipe...
in a sauce pan filled about half way with water, boil the tomatoes. Boil just long enough so you
can easily peel off the skins of the tomatoes...about one minute or so after the water starts boiling. Remove the tomatoes
carefully from the boiling water and peel. Caution: The tomatoes just came out of boiling water...guess what THEY
ARE HOT!!!
Set the tomatoes aside, they should still be fresh, all the boiling did was help you to peel them.
Cut up your washed veggies and drain them on a paper towel...have them ready to saute in your
skillet.
next...take your fresh garlic and pull apart 1, 2 for a little garlic taste or more for whole lotta
garlic taste (I say the more the better!) peel each clove, cut off the end, smash it with a spoon and cut up in little pieces...do
that with all your cloves...and get ready to add this to your skillet.
next...take a big skillet and either spray it with olive oil Pam or dizzle one or two tablespoons of
olive oil in it. Turn on the heat and and immediately put in your garlic. You don't want the heat so high that
it is burning your garlic, cook the garlic at about medium heat until a little tan in color.
Next goes in the vegetables stirring them constantly and cook until they are still
crunchy but a little soft too. While the veggies are still cooking take your tomatoes and smash them up in a bowl.
next...add the tomatoes to the skillet of cooked veggies along with about a 1/2 cup of water and continue
cooking the mixture until it has the consistancy of a tomato sauce.
finally, add the fresh basil...I usually break off about a hand full, but you add as much as you
want. Let all that simmer....yum! You can season with a little sea salt if you like.
My favorite way to serve this sauce is over portebello mushrooms that have been steamed first, cut into
slices and sauteed in a little "I can't believe it's not butter spray" sprinkled with garlic salt. Kind a like "spagetti"
Calories are less than 100 per serving. Vitamins galore...After eating this your body says YEA!!!!
